Corned Beef
Description
This is another reminder for me. At a couple of supermarkets in town you can sometimes find packaged corned beef in the fresh meat section (usually Safeway, Maple Leaf brand) – some stores will marinate and brine them themselves. Mom often made roasted corned beef with potatoes and creamed cabbage but I usually only make one occasionally for the yummy sandwiches they provide – here’s the outline of what Mom does.
Ingredients
Corned Beef
1 package ‘fresh’ corned beef – 1 1/2 to 3 lbs.
1/2 – 1 c. apple juice or beer
2 – 6 T. brown sugar
1/2 – 3 t. dry mustard
Instructions
Line a small roaster with 2 or 3 long pieces of foil so that once the meat is put in, you can pull the edges together and seal it up in a tight package. Unpack the corned beef and dispose of any excess juice or spices, lay it in the roaster and seal it in the foil.
Bake at 325 for about 2 1/2 hours then remove from the oven and carefully open up the foil – pour off all of the liquid that has accumulated.
Mix together the apple juice or beer with some brown sugar and dry mustard – Mom likes to make it thick like syrup, I usually do mine a bit runnier because I make it ahead for sandwiches and then it sits, sliced, in a container with the extra sweet juice. However you make it, mix some up and pour it over the roast and return it to the oven – with the foil left open – for another half hour.
Slice as thick or as thin as you like it – against the grain – and serve it up with your favorite fresh bread.
