Roasted Parsnips

Just a really good – maybe the best? – way, to enjoy your parsnips!


Ingredients

as many parsnips as you’d like, peeled and cut into coins and ‘sticks’ of a similar thickness

avocado oil or spray

sea salt and freshly ground pepper

~2 T. maple syrup


Instructions

Preheat your oven to 400 and line a large baking sheet with parchment.  Either toss your prepped parsnips in a large bowl with a splash of avocado oil, then lay out in a single layer on the baking sheet – or – lay them out on your prepared baking sheet, give them a light spray, toss with your hands and finish with another light spray.  Dust all with a sprinkling of sea salt and a generous grinding of fresh pepper.

Bake for about 20 minutes, or until you can see some obvious browning happening.  Remove from the oven, toss and flip the parsnips as best as you can, then very lightly drizzle just a titch of maple syrup overall.  I think 2 tablespoons should be more than enough.  Bake for 10 more minutes then serve them straight away – enjoy!
