Lemony Dill Sauce for Salmon (or Trout)

Found on Recipe Tin Eats, this is the perfect sauce to serve with simple grilled or roasted salmon (or trout).  We enjoyed ours with an easy summer salad but it was even better the next day used as a sandwich topper (I doubled what’s below, and added more dill than the original recipe!) – enjoy!


Ingredients

Scale

3/4 c. (180 g) sour cream

2 t. Dijon (or hot mustard)

1/2 t. garlic powder (or 1 small clove, minced)

~1/2 c. fresh dill, minced

1 t. lemon zest AND 1 or 2 T. fresh lemon juice

2 T. olive oil

1/2 t. EACH kosher salt AND sugar


Instructions

Add all ingredients to a mini chopper or food processor and blend well, scraping down the sides as needed.  You can easily mix this by hand, but just be sure to whisk/mix well so all of the ingredients are well combined.

Taste for seasonings, adjust as needed and give yourself time to allow it to chill for at least a half hour before serving to allow the flavors to come together.  Serve as you wish!  This is a really lovely sauce and I also think it would be great on a baked potato.
