Applejack Rabbit

Description

The Applejack Rabbit first appeared in Judge Jr’s obscure 1927 book “Here’s How”, and gained momentum thanks to Jim Meehan who is best known for his work at PDT (Please Don’t Tell) in New York. Laird’s is the oldest distillery in the United States and the bonded version of the Applejack holds up best in this citrus forward cocktail.  Originally Brock was bringing it back from New York but Vine Arts now has it on their shelves!  Both juices must be freshly squeezed – enjoy!


Ingredients

Scale

For one cocktail;

2 oz. Laird’s bonded apple brandy

3/4 oz. freshly squeezed lemon juice

3/4 oz. freshly squeezed orange juice

1/2 oz. maple syrup

garnish ideas – lemon twist (attach to the edge of the glass) or a very thin mandarin orange slice (so thin, it floats)


Instructions

Pour all but the garnish into a shaker with ice, shake until well chilled and then strain into a (chilled) coupe glass.  Express the lemon peel over the finished drink and then use it for garnish (and/or slide in a mandarin slice).  Favorite new cocktail from 2025 for sure!
