Strawberry Negroni

Description

Great idea from America’s Test Kitchen (and a great way to use up overripe strawberries).  The original recipe suggests leaving the strawberry mix for 3 days…we left ours for a couple of hours and it was delicious – our only mistake was to not save a couple of strawberries for garnish (or a photo) – enjoy!


Ingredients

Scale

For 4 cocktails;

~1 c. cleaned and quartered strawberries – about 8 to 10 good-sized berries

4 1/2 oz. London dry gin

4 1/2 oz. Campari

4 1/2 oz. sweet vermouth

extra sliced strawberries for garnish


Instructions

Use a 4 cup measure or large container to mash together the berries and all 3 alcohols.  Cover and leave to sit in a cool place (no sunlight) for a couple of hours (or up to 3 days).  When you’re close to making your cocktails, strain the mix into a new container to remove all solids.

For one drink, pour 3 ounces of the clear gin mixture into a mixing glass filled with ice.  Stir and strain into an old-fashioned glass or coupe, then make another!  Garnish and serve!
