Easy Tortilla Lasagna Roll-Ups

Cozy fast food…think, lazy burrito with Italian seasoned meat (I like beef, but chicken or turkey could totally work!).  I saw this on Instagram, thought about all of the times this is exactly what we’re all craving, and made it that evening.  Below is my outline based on fitfoodiestasia’s account – enjoy!


Ingredients

Scale

8 to 10, 8-inch tortillas – I liked straight flour for this and the number depends on how much you fill them

Filling

1 lb. (454 g) extra lean ground beef (or chicken or turkey)

1 t. EACH salt, pepper, garlic powder AND oregano – consider red pepper flakes as well!

1 can (156 mL) tomato paste AND 1/4 to 1/2 c. water

~1/2 c. cottage cheese

Topping

~1 c. tomato sauce – any will do…if you open a can, use it all, I’ve even used leftover pizza sauce

~2 c. grated cheddar/mozzarella/Parmesan – use what’s in your fridge and if you remember, sprinkle some on each tortilla before you roll them up


Instructions

Preheat the oven to 400 and lightly spray a 9 x 13 casserole.  Heat up a splash of oil in a skillet over medium heat and cook the beef for several minutes, breaking it up as you go, until there’s no longer any obvious pink.  Sprinkle on all of the spices that you’re using and mix well, then scrape in the tomato paste and cook and stir for a couple more minutes until the mix is a lovely dark red.  Add in the water, starting with a 1/4 cup, bring the skillet to a simmer and let it gently cook, adding more water if it gets too dry, while you get the tortillas and cheese ready.

Remove the skillet from the heat and stir in the cottage cheese.  Lay out a tortilla, add a half cup or so of the filling, a sprinkling of cheese and then lay it in your casserole.  Fill and arrange the roll-ups as you wish and if there’s any filling left, I recommend just adding it on top of the casserole.  Pour on as much or as little tomato or pizza sauce as you wish, generously cover with grated cheese and bake for 20 to 30 minutes until everything is bubbling and the top is starting to brown.  We enjoyed ours with a quick salad – such a quick and cozy dinner!
