Quick (Protein-Filled) Dips

I saw these on Instagram and Dom in the Kitchen made 3, super quickly.  These were the 2 that I knew I’d make in a pinch for a quick snack or lunch and both are very flexible and have enough protein to make you feel full.  Dom’s idea was to keep the ingredients of your favorite one handy for any unexpected guests – enjoy!


Ingredients

Scale

Olive and Chickpea Tapenade

8 to 10 green garlic stuffed olives – OR – about 16 small green pitted olives and 1 minced clove of garlic

100 g chickpeas – this is about half a 398 mL can, drained

a good handful of fresh cilantro

1/2 t. freshly ground pepper – wait until you’ve blended and tasted before you add salt!

2 T. good olive oil – plus more as needed for consistency

Cheese and Onion

300 g cottage cheese – a heaping cup

~1/2 c. chopped green onion

~1/2 c. diced white onion

75 g cubed strong cheddar – I used white, extra old

1/2 t. EACH kosher salt AND freshly ground pepper

1 T. good olive oil


Instructions

Separately, pulse the ingredients of each dip in a mini chopper or food processor, taste for seasonings and adjust as you wish.  Both dips are wonderful with any kind of cracker or with cut up vegetables!
