Dark Chocolate Coconut Blondies

Another Sally special!  Even though these are awfully similar to Toffee Bars, this is a delightful combo, and easy to mix up by hand! – enjoy!


Ingredients

Scale

2 c. (250 g) flour

1 t. baking powder AND 1/2 t. salt

1 c. (227 g) butter, melted but only barely warm

1 3/4 c. (350 g) packed dark brown sugar

1 egg AND 1 egg yolk

1 T. vanilla

1 c. (80 g) sweetened shredded coconut

1 c. (180 g) dark chocolate chips


Instructions

Preheat the oven to 350, grease a 9 x 13 pan, line it with parchment (leaving an overhang for easy removal), and grease the parchment.  In a large bowl, stir together the flour, baking powder and salt.

In a separate medium bowl, whisk together the melted butter and brown sugar for a couple of minutes until well combined, then whisk in the egg, yolk and vanilla.  Scrape the wet into the dry and use a sturdy spatula to stir until there’s no trace of flour.  Fold in the coconut and chocolate.

Spread the batter evenly into your prepared pan and smooth the top.  Bake for about 30 minutes until the center is set, the edges are starting to brown and if you want to be extra thorough, use an instant thermometer and make sure the middle reads 200 degrees.  Leave the blondies to cool in the pan for a good half hour before carefully lifting them out (if you wish!) to a cutting board.  You’ll be able to cut perfect squares if you allow them to cool completely, but of course they’re brilliant warm.
