Cottage Cheese (Breakfast) Tacos

You’ve probably seen this idea in a few places, and it really is as easy and tasty as it looks!  I found a few variations on Instagram and then used Foodie Holly’s version as an outline.  What I did is below and makes 4 to 6 taco ‘shells’ – enjoy!


Ingredients

Scale

1 c. (250 g) cottage cheese AND 1 egg

salt, pepper, oregano, chili flakes – or whatever other herbs or spices you’d like to try

Topping ideas;

fried eggs, pesto, bacon, cheese, tomatoes, avocado slices, arugula, sprouts, pickled red onions or chopped chives, roasted red peppers, Sriracha or Valentina, mayo, sour cream or any full flavored creamy dressing – really anything that you’d find tasty or are craving would work!


Instructions

Preheat your oven to 400 and line a baking sheet with parchment.  Use a fork to whisk together the cottage cheese and egg until well combined, then spoon onto the baking sheet into 4 (or 6) equal circles.  Bake for 20 to 30 minutes depending on the size of the rounds – you want them set in the middle and ideally crispy around the edges.  Leave the tacos to cool while you get your toppings organized.

Dress as you wish and dive in – the leftover tacos also work really well straight out of the fridge!
