Baked Halibut with Lemon Garlic Butter

A very tasty and quick weeknight idea that we found online at Kit’s Kitchen – enjoy!


Ingredients

Scale

1, 2 or 3 halibut fillets, ideally of similar size and thickness – about 1 lb.

1/2 c. (114 g) butter, melted – warm only

4 cloves of garlic, finely minced or grated

2 T. EACH parsley AND chives (or green onion), both finely chopped

1 t. sea salt AND 1/2 t. freshly ground pepper

1 lemon, sliced into 2+ slices for baking and wedges for serving


Instructions

Preheat the oven to 400, line a baking sheet with parchment, pat the fillets dry and check for bones.  In a small bowl, whisk together the butter, garlic, parsley, chives, salt and pepper and continue to whisk until the salt has dissolved.

Place the filets on the parchment and spoon half of the butter mix over all, covering completely, then top each with a lemon slice.  Bake for 12-16 minutes until the internal temperature is 145.  Serve with the remaining butter mix and lemon wedges – we enjoyed ours with some Loaded Baked Rice.
