Herby Cottage Cheese Dip

Straight from NYT Cooking, this is a delicious high protein way to get those veggies in! – enjoy!


Ingredients

Scale

~2 T. olive oil

1 small onion, chopped (about a cup)

1/2 t. EACH kosher salt AND freshly ground pepper

1 container (475 g) full-fat cottage cheese (about 2 cups)

~1 c. chopped fresh herbs – basil and parsley are recommended, I also had oregano this time

~1/4 c. thinly sliced chives, scallions or green onion + more for garnish

2 T. freshly squeezed lemon juice (usually 1 large lemon)

For serving – cut up fresh vegetables, chips or crackers


Instructions

Pour the olive oil into a medium skillet over medium heat and follow with the onion, salt and pepper.  Cook and stir for several minutes until golden brown and then remove from the heat and leave to cool for about 20 minutes.

Using a mini chopper or your food processor, pulse together the cooled onions and cottage cheese and then add in all of the herbs and lemon juice and pulse again.  Scrape down the sides, taste for seasonings and pulse once more to smooth it out.

Scrape into a covered container and allow to chill for an hour or so before serving to allow the flavors to come together.  Plate as you wish and garnish with some extra herbs or green onion.
