
Goat Cheese Mashed Potatoes
Description
I borrowed this idea from Cooking Light – I think the ‘light ‘ part is up to you.
Ingredients
Goat Cheese Mashed Potatoes
3 lbs. potatoes, peeled and cut into similar-sized pieces
1 t. salt AND 2 T. butter
1/2 – 1 c. crumbled goat cheese
1/2 t. freshly ground pepper
1/2 c. milk
3–5 green onions, cleaned and finely chopped
Instructions
In a large pot, cover the potatoes with water, sprinkle with a bit of salt and bring to a boil. Simmer for 15-20 minutes until tender.
Drain the potatoes and return them to the pot over very low heat. Using a hand masher, mash the potatoes with the butter and 1 teaspoon of salt, then add the cheese (to taste) and pepper (to taste) and mash again.
Stir until the cheese melts and then stir in the milk, keeping the pot over low heat until everything is heated through. Remove from heat and stir in the green onion.
At this point they are ready to serve, but when I made them I put it all into a casserole ahead of time and warmed it up in time for dinner. You need to make these if you like goat cheese!
