Egg Tortilla Bake (3 Ways)

Perfect for breakfast, lunch or dinner, super easy and quick!  It’s a ‘choose your own adventure’ fabulous idea from the Food Dolls and you truly can use what you have on hand to dress up your filling.  Below are 3 options using items that I regularly have in the house – enjoy!


Ingredients

For each tortilla bake, made in a 9-inch pie plate;

1 large tortilla – I found XL ones for Burritos that were 10-inches

1/3 c. cottage or ricotta cheese

3 eggs AND salt and pepper to taste

option 1

1/2 c. + diced peppers AND 1/4 c. chopped green onion

1/2 c. + grated smoked cheese

option 2

a handful of spinach AND 1/2 c. diced tomato

1/4 c. EACH chopped olives AND crumbled feta AND chopped red or green onion

1/2 c. + grated mozzarella

option 3

1/2 c. + chopped broccoli AND 1/4 c. chopped green onion

1/2 t. garlic salt AND 1/2 c. + grated old cheddar


Instructions

Preheat the oven to 350, lightly grease a 9-inch (or larger) pie plate and then line it with a large tortilla.  Whisk together the base ingredients in a medium bowl (eggs, cottage cheese or ricotta and salt and pepper), and pour into the tortilla.  Evenly add your topping options, finishing off with a sprinkling of the grated cheese that’s being used.

Bake for 20 to 25 minutes until the center is set and then remove and allow to rest for a few minutes before attempting to cut into slices.

These are super quick (and very appreciated!), especially if you have the toppings ready to go and waiting for you in the fridge.
