Greek Lettuce Salad (Maroulosalata)

I’ve already made this so-many-times – and we have my sister-in-law, via Hungry Happens to thank!  Super simple…but please take the time to chop…chopped salad is everything.  I changed up the dressing just a titch, but otherwise what you see is really it – TRUST!


Ingredients

Scale

2 hearts romaine lettuce, leaves cleaned and dried (I wash thoroughly with cold water, often a couple of days ahead, roll in clean tea towels and store in the fridge until I need it)

1 bunch green onion, cleaned and finely chopped

1 bunch fresh dill, cleaned and finely chopped

1 c. + crumbled feta

Dressing

1/4 to a 1/3 c. EACH freshly squeezed lemon juice AND good olive oil – equal amounts is the key here

1 T. Dijon AND 2 t. honey

1/4 t. EACH kosher salt AND white pepper


Instructions

Measure all dressing ingredients into a container with a tight lid, give it a good shake, taste for seasonings and then set aside.

Thinly slice all of the clean, dry romaine into a large salad bowl and add the remaining green onion, dill and feta – this is a perfect way to transport the salad to someone’s house.

When you’re ready to serve, give the dressing a last shake, pour it over all and toss well to combine.  This salad has proven to be brilliant with literally anything – enjoy!
