Butter Swim Biscuits

The name says it all!  Borrowed from I Am Baker, these babies are irresistible – enjoy!


Ingredients

Scale

2 1/2 c. (313 g) flour AND 4 t. baking powder

1 T. sugar AND 2 t. kosher salt

2 c. (490 g) buttermilk – room temperature

1/2 c. (113 g) butter, melted


Instructions

Preheat the oven to 450, prep your ingredients and dig out your favorite 8 x 8 cake pan or casserole dish and place it on a parchment lined baking sheet.  In a medium bowl, whisk together the 4 dry ingredients, then pour in all of the buttermilk and use a sturdy spatula to stir and fold until just combined.

Scrape the melted butter into your chosen 8 x 8 pan and then place/scrape/pour the dough out into the pan on top of the butter.  Use the spatula or your hands and do your best to spread the dough out evenly to all of the edges.  Cut the unbaked dough into 9 squares (a 3 x 3 pattern) – this is hard to do and it will look like a mess!  Bake for 20 minutes, carefully remove the biscuits from the oven and re-cut the 9 squares, then bake for another 5 to 10 minutes until the biscuits are cooked through and the tops are a rich golden color (and the leftover butter has browned and is bubbling along the edges of the pan).

Leave the biscuits to rest for about 10 minutes so any remaining butter can be absorbed, then serve warm with jam and/or honey!
