Simple Arugula Salad
Description
Hardly a recipe, I googled ‘Arugula Salad’ and decided on something between Two Peas & Their Pod and Cookie + Kate. Use this as an outline or idea, arugula is awesome! and we enjoyed a version of this a few times last summer (usually with a good steak) – enjoy!
Ingredients
a couple of handfuls of arugula for each person eating the salad
1/2 to 1 T. per person of tasty vinegar – balsamic, balsamic reduction, rice vinegar, champagne vinegar OR freshly squeezed lemon juice
1/2 to 1 T. per person good olive oil
a pinch of flaky salt and/or red pepper flakes and/or a good grinding of freshly ground pepper
1/2 t. honey
strong cheese – old cheddar, Parmesan, Gruyère – either as a garnish or a salad addition
pickled red onions – thin slices tossed in a tablespoon of vinegar or lemon juice, with a good pinch of salt and sugar and left to marinate for at least 10 minutes (I usually have a container of these in the fridge, they’re fantastic with so many things!)
fresh tomatoes or other garden vegetables that you have on hand
toasted (salted) nuts or seeds
Instructions
In a well sealed container, shake together your acid, oil, salt and honey, taste for seasonings and set aside. In a large bowl, add the arugula and any of your desired fixings (or just the arugula and plate the extras individually), toss with a bit of dressing (less is always best) and serve as you wish with just about anything!
