Carrot Dogs

Admittedly odd…these are a lovely substitution for not only regular hotdogs, but veggie dogs as well for those who aren’t into overly processed food.  Found on Love & Lemons, marinate (ideally overnight), grill, dress up as you wish and enjoy!


Ingredients

Scale

4 to 8 medium, hot dog-sized carrots, peeled and trimmed (I used 4 – better marinade coverage)

1/4 c. EACH apple cider vinegar AND soy sauce (or tamari)

1 T. smoked paprika AND 1 t. garlic powder

water as needed

avocado or another oil for drizzling/spraying before grilling

hot dog buns and all trimmings!


Instructions

Place the prepped carrots in a steamer basket and set over a pot filled with an inch or so of water.  Bring the water to a simmer, cover and steam for about 10 minutes until the carrots are barely fork tender.

Whisk together the vinegar, soy sauce, smoked paprika and garlic powder in a sealable container, add the steamed carrots, roll them around so they’re well covered, add a titch of water if you wish to leave them submerged (I simply gave the container a shake every time I opened the fridge), allow the carrots to cool and then cover them and put them in the fridge while they marinate.  I’m sure that a couple of hours is fine but overnight is best/easiest.

When you’re ready to grill, pat the carrots dry, drizzle or spray with a bit of oil and grill like you would a regular hot dog – well charred is how we roll!  Serve in buns with all of the fixings and perhaps a handful of potato chips on the side.
