Avocado Feta Dip

So many versions/ iterations/ variations, and I’m sure they’re all super tasty! This is pretty tough to mess up! I based mine on Two Peas and Their Pod – consider what’s below an outline – enjoy!


Ingredients

Scale

2 avocados, peeled and pitted

1/2 c. crumbled feta AND 1/4 c. diced onion

1 clove of garlic, minced AND 1 T. minced jalapeño

1/3 to 1/2 c. chopped cilantro AND the juice of 1 lime (~1 tablespoon)

kosher salt AND freshly ground pepper to taste – I use more pepper if I don’t have a jalapeño handy

1/4 to 1/2 c. sour cream or Greek yogurt to smooth the dip out and add creaminess – optional

sturdy chips, cut up vegetables and/or crackers for serving


Instructions

Place everything but the salt, pepper, yogurt/sour cream into your blender or food processor and pulse until almost smooth.  Taste for seasonings, and be generous! no one ever said ‘my dip has too much flavor’!.  Add salt and pepper as you wish and then a dollop of yogurt or sour cream to smooth it out (again, as you wish), and then give the dip a final blend.  Scrape into a bowl and serve with your chosen sides, but also keep in mind that this makes a terrific sandwich spread!
