Basil Sauce (for a Caprese Sandwich)

An amazing sauce that will dress up any sandwich!  Borrowed from Cookie+Kate, below is the goodness along with easy summer lunch/dinner and picnic ideas – enjoy!


Ingredients

Basil Sauce

1 small clove of garlic, minced AND 1/2 c. mayonnaise

1 c. + fresh basil leaves – I used 29 g

salt and freshly ground pepper to taste – I used about a 1/2 t. of each

Sandwich Thoughts

ciabatta bread or buns OR baguettes sliced into sections and then halved OR thin focaccia – lightly toasted in the oven for a few minutes

drizzle one side of your sandwich creation with good olive oil and balsamic glaze, thickly spread basil sauce on the other side

thickly sliced fresh mozzarella, fresh tomatoes and arugula is a favorite option – it’s also nice to bake the bread with the mozza on it before adding the fresh ingredients

super thinly sliced charcuterie – prosciutto, coppa di parma, hot genoa salami, Milano salami, salami with prosciutto – layered thickly along with mozzarella, tomatoes and arugula is another favorite


Instructions

In a food processor, pulse together the basil sauce ingredients and taste for seasonings. Prepare your sandwich(es) as you wish and get ready to crave them on a weekly basis!
