Soy-Lime Roasted Tofu

Description

A super easy way to dress up tofu for a snacky appetizer or a perfect salad topping.  Eating Well had this great idea – enjoy!


Ingredients

2 packages (350 g) extra-firm tofu, drained and pressed, then cut into 1/2-inch cubes

2/3 c. EACH soy sauce AND freshly squeezed lime juice

6 T. toasted sesame oil


Instructions

Combine the soy sauce, lime juice and sesame oil in a large Ziploc and add in the pressed, cubed tofu.  Seal and marinate for 1 to 4 hours.

When you’re ready to roast it, preheat the oven to 450 (or a convection oven or air fryer to 400) and line a large baking sheet with parchment.  Drain the tofu and spread it out over the baking sheet (or on a lightly oiled basket in an air fryer, you will likely need to do 2 or 3 batches).  Bake for 15 minutes, give it a good stir and then bake for another 5 to 15 minutes depending on how brown and crispy you’d like it.  Serve straight away as you wish!
