Easy Peach Cobbler

Exactly as titled and also super delicious.  Thanks to Love & Lemons for the recipe – the only change I made was to halve it (as below) for an 8 x 8 pan!


Ingredients

Scale

3 large peaches – no need to peel, but definitely slice them thinly

1 t. lemon juice

1/3 c. flour AND 2 T. cane sugar AND a pinch of cinnamon

1/8 t. EACH baking soda AND salt

23 T. butter, melted (or coconut oil, melted) AND 1/2 t. vanilla

extra cane or raw sugar for sprinkling + vanilla ice cream for serving


Instructions

Preheat the oven to 400, butter an 8 x 8 pan and then evenly layer the sliced peaches across the bottom of the pan and lightly sprinkle on the lemon juice.

In a small bowl, whisk together the flour, sugar, cinnamon, baking soda and salt then add in the butter and vanilla and use a sturdy spatula to work the ingredients together until crumbly.  Sprinkle this new mix evenly over the peaches, sprinkle on some extra coarse sugar (highly recommended for the crunch value) and bake for 30 minutes until the cobbler is lightly browned on top and the peaches are juicy.

Serve immediately (or at room temperature), with ice cream!  Enjoy!
