Key Lime Pie Popsicles

They taste exactly as you think they should, and they take less than 3 minutes to make…what’s not to love?  I currently have maybe the third batch waiting for us in the freezer.  Found by Smitten Kitchen, we’re grateful! – enjoy!


Ingredients

In the popsicle forms shown in my photo, this recipe makes 8 pops for me;

3/4 c. freshly squeezed key lime or lime juice

2 t. key lime or lime zest

1 can (300 mL) sweetened condensed milk

1 c. light cream (or half and half of milk and heavy cream)

a pinch of salt

1 + c. crushed graham crackers for rolling – optional


Instructions

Whisk together the juice, zest, condensed milk, cream and salt until well combined and then pour evenly into your chosen popsicle molds.  That’s seriously all that you need to do!

Freeze (ideally) overnight, then run each pop under warm water until the form can be easily removed, then give each a roll and a press in the graham crumbs.  Now put another batch into the freezer because your family has already eaten them all!
