One Pot Lemon Garlic Spinach Pasta

So lovely!  Another super tasty weeknight meal brought to us by the Food Dolls that’s (of course!) also really quick – enjoy!


Ingredients

Scale

454 g small bite pasta

4 cloves of garlic, minced

1/2 t. EACH kosher salt AND freshly ground pepper

4 c. chicken (or vegetable) broth – more broth or water may be needed

zest and juice from a large lemon

1 c. cream AND 6 c. fresh spinach AND 1/2 c. chopped fresh parsley

1/2 c. + freshly grated Parmesan


Instructions

I have a big non-stick skillet that I always use with one pot dishes like this, so place the pasta in the pot of your choice and sprinkle all with the garlic, salt and pepper.  Pour in all of the broth, bring the mix to a boil and simmer until the pasta is al dente, about 10 minutes.

When the pasta is cooked, zest in the lemon and squeeze in the lemon juice and give it a quick stir, then pour in the cream, allow it to heat through and then work in the spinach and parsley – this may take a few minutes – leave the heat on low.

Serve in large bowls with a heavy sprinkling of Parmesan – I told you this was quick!
