Tomato and Fried Caper Salad

Really simple, super quick and SO so so tasty – salty fried capers are everything!  Found in Carla Lalli Music’s book, ‘That Sounds so Good’, make as much as you want/need…the recipe is really flexible – enjoy!


Ingredients

Scale

2+ lbs. of tomatoes, preferably different colors and sizes – all sliced or halved as you wish

The Saucy Goodness

flaky salt to sprinkle on the tomatoes

at least 1/4 c. good olive oil – plus more for serving

2 T. fresh thyme leaves AND 1 t. flaky salt

1/4 c. drained and rinsed capers

1 lemon for squeezing over everything


Instructions

Transfer the prepped tomatoes in a pretty looking placement to a platter or plate of your choice and sprinkle all with flaky salt.  Allow them to sit while you prep the sauce.

Crush or grind the thyme leaves and the 1 teaspoon of salt together and heat up about a quarter cup of olive oil in a small skillet.  Add the capers and sauté until they begin to pop and burst then turn off the heat, scrape in the thyme/salt combo and stir well to combine.

Drizzle this goodness over your prepared tomatoes and then add more olive oil and flaky salt as you see fit.  We enjoyed this straight away but the original recipe also suggests allowing it all to sit at room temperature for an hour or two – we fought over these tomatoes!
