The Perfect Salad

I saw this on one of the super quick videos on Instagram and I can’t find it again!  I did take some pretty decent notes though, so below should be a very usable outline which can be used as you wish.  We loved, loved, loved all of these ingredients together – enjoy!


Ingredients

Dressing Outline

equal parts fresh orange juice AND white wine vinegar AND olive oil – try 1/4 c. of each to start

1 small shallot and/or a clove or 2 of garlic, finely minced

1/2 t. EACH kosher salt AND freshly ground pepper

1 T. + honey (to taste)

Salad Outline

1/2 to 1 c. farro, cooked according to package directions and cooled (I did this first thing in the morning)

a few mini cucumbers, cleaned and sliced

2+ c. chopped strawberries

1 c. salted, roasted pistachios, chopped if you wish

1 c. solid ricotta salata, crumbled – I’ve also used feta, just remember that it’s usually saltier

1 large handful of shopped fresh mint

several handfuls arugula


Instructions

For the dressing, either add all ingredients to a blender or to a sturdy container with a tight lid and then pulse or shake well to blend.  Taste for seasonings, I found that a titch of extra honey helped the berries to stand out.

For the salad, arrange all of the ingredients that you’ve chosen, except for the arugula, in a large bowl.  Drizzle all with the dressing and toss well – taste for seasonings and/or add more dressing if you wish.  Once you have the perfect salad, make it even better by adding in a whole lotta arugula and toss again.  This was brilliant, if I’d made double the amount the first time, I’m quite convinced we would have wiped that out too!
