Oatmeal Crunch

This is an old recipe of Mom’s and it’s nice and quick.  I left in all of the fat, but cut back slightly on the sugar and now make it regularly with the added flax meal…no one seems to have noticed, so why not add it in?  This is also easily doubled to a 9 x 13 – enjoy!


Ingredients

Scale

2 c. oatmeal AND 1/4 c. flax meal

3/4 c. (150 g) brown sugar – use dark brown sugar for a more caramelized taste

1 t. baking powder AND 1/4 t. salt

1/2 c. (113 g) melted butter

1 t. vanilla


Instructions

Preheat the oven to 375 and grease an 8 x 8 pan.  Combine the 5 dry ingredients in a medium bowl and then stir in the melted butter and vanilla.  Once it’s well mixed, gently press into the prepared pan and bake for 18 to 20 minutes.  Keep an eye on it, it doesn’t take much for it to get too dark.

Let it rest for about 10 minutes and then cut it into serving pieces in the pan while it’s soft.  I recommend leaving it in the pan (so that it will stay together), until it’s cooled completely.
