Adapted from Dinner with Julie – everyone loved them!
3/4 c. flour AND 1/2 c. whole wheat flour
1 t. baking powder AND 1/4 t. salt
3/4 c. unsweetened coconut + extra for topping (or larger flake coconut to garnish)
2 ripe bananas, mashed AND 1/2 c. brown sugar
1/3 c. canola oil AND 1/3 c. buttermilk
1 egg AND 1 t. vanilla
Preheat the oven to 375 and grease a muffin tin.
In a large bowl stir together the flours, baking powder, salt and the 3/4 cup of coconut. In a smaller bowl, whisk together the mashed bananas, sugar, oil, buttermilk, egg and vanilla. Add the wet ingredients to the dry and stir just until blended.
Pour evenly into the tins, sprinkle with some coconut and bake for about 15 minutes. Allow them to rest in the pan for a few minutes before trying to remove them to a rack to cool.
