Napa Cabbage Salad (with Buttermilk Dressing)

Description

Borrowed from Smitten Kitchen, this is a super simple salad that packs a lot of flavor and crunch – enjoy!


Ingredients

Scale

Dressing

1/2 c. well-shaken buttermilk

2 T. EACH mayonnaise, apple cider vinegar AND finely minced shallot (or sweet onion)

1 T. sugar

1/2 t. salt AND 1/4 t. freshly ground pepper (or both to taste)

3 T. finely chopped chives (or green onion)

The Rest

1 lb.+ Napa cabbage, cored and thinly sliced

6+ radishes, thinly sliced or diced

2+ celery ribs, thinly sliced diagonally


Instructions

Whisk in a small bowl or shake together in a well sealed container all of the dressing ingredients, except the chives, for a minute or two, until the sugar has dissolved, then add in the chives and whisk or shake to mix.  Taste for seasonings and adjust if needed.

In a large bowl, toss together the cabbage, radishes and celery and the dress and serve as you wish!
