Dark Chocolate Oatmeal Cookie Bars

Also known as ‘dessert in 30 minutes or less’.  You can’t really go wrong here, and if you choose to use good dark chocolate and melted coconut oil, then this is a perfect lactose-free treat as well.  Borrowed from Half Baked Harvest, these are easy and quick enough to win any weekday – enjoy!


Ingredients

2 1/2 c. large flake oats

1 c. EACH flour AND whole wheat pastry flour (or white whole wheat flour)

1/4 c. sugar AND 1/2 c. brown sugar

1 t. baking soda AND 1/2 t. kosher salt

1 c. melted butter (or melted coconut oil)

2 eggs AND 1 T. vanilla

1 1/2 c. dark chocolate chunks or chips (I may, or may not, have doubled this)

flaky Maldon salt for garnish


Instructions

Preheat the oven to 350 and grease a 9 x 13 cake pan with whichever fat you’re baking with.  Add to the bowl of your electric mixer the oats, both flours, both sugars, baking soda, salt, melted butter, eggs and vanilla and mix on low speed until the ingredients come together, and then increase the speed until the dough is moist and all is well combined.  The dough will be crumbly.  Stir in the dark chocolate.

Press the dough into your prepared baking dish and bake for about 20 minutes until the middle is set and the edges are a light golden brown.  Leave the bars to cool before cutting if you’d like actual squares and sprinkle with more salt before serving if you wish.
