Strawberry, Lime and Black Pepper Popsicles

Description

Another summer hit from Smitten Kitchen, (especially since they’re super tasty dipped in tequila) – enjoy!


Ingredients

Scale

4 heaping cups (about 20 oz.) fresh, ripe strawberries, hulled and quartered

2/3 c. sugar AND 1/2 c. water

juice of 2 limes AND a pinch of sea salt

1/2 t. freshly ground pepper (more or less as you wish)


Instructions

Combine the strawberries and sugar in a medium pot and leave them to sit and macerate for at least 15 minutes (longer if they’re not as ripe as you’d like).  After the 15 minutes, add the water and bring the mix to a boil while stirring, then reduce it to a simmer and cook for about 5 minutes.  Remove the pot from the heat and leave it all long enough to come to room temperature.

Once cool, scrape the mix into your blender, squeeze in the lime juice and sprinkle in the salt and pepper and blend until mostly smooth.  Divide evenly among the molds that you have – I have several! – but for myself, this amount made 8 popsicles of the type in the photo.  Make sure to leave at least a quarter inch at the top to allow for freezing expansion and then leave the treats to freeze for several hours, preferably overnight.

Obviously all of the kids loved these (yes, even with the pepper!), but Deb’s suggestion of adults dipping their popsicle in a wee splash of tequila can’t be ignored – it’s a lovely way to finish off a summer evening!
