Sour Cherry Sauce

We have a young Valentine Cherry tree in our yard and since there weren’t enough cherries for jam, Brock researched a sauce (for ice cream, of course!).  Apparently it has Russian roots! We’re also pretty sure this would be amazing on pancakes and waffles – enjoy!


Ingredients

Scale

1 c. (~200 g) fresh sour cherries, pitted

1/4 c. water

2 T. sugar AND 1 t. cornstarch


Instructions

Pour the water into a heavy pot or non-stick skillet, add in the sugar and cornstarch and whisk until smooth.  Bring the mix to a boil over medium heat, add in all of the pitted cherries and simmer and stir for about 5 minutes until the cherries have softened and the sauce has thickened slightly.  Enjoy hot or at room temperature over a big bowl of vanilla ice cream!
