
Ranger Cookies
Description
I can’t ever resist trying a new cookie recipe, especially one that can be rationally gobbled up as a ‘snack’. I discovered these hearty wonders on King Arthur Flour’s site – enjoy!
Ingredients
1 c. butter, room temperature
1 c. EACH sugar AND brown sugar, packed (I used dark)
1 t. EACH vanilla AND salt
2 eggs
2 c. flour
1/2 t. baking powder AND 1 t. baking soda
1 c. EACH large flake oatmeal, unsweetened shredded coconut AND chocolate chips
3 c. cornflakes (or crispy rice cereal)
Instructions
Preheat the oven to 350 and line a couple of large baking sheets with parchment. Using your electric mixer, beat together the butter, both sugars, vanilla and salt for a couple of minutes until fluffy, then crack in the eggs and beat until the mix is smooth.
In a separate small bowl, whisk together the flour, baking powder and baking soda and then add these dry ingredients to the mix and mix until well combined. Add in the oatmeal, coconut, chocolate chips and cornflakes and mix until just blended – you may have to finish the cookie dough by hand.
Drop the dough by rounded teaspoonfuls onto your prepared baking sheets and bake for 10 to 12 minutes until golden brown. Allow the cookies to sit on the pan to cool for a few minutes before removing them to a rack to cool completely. These are wonderful any which way you choose to enjoy them and they also freeze beautifully.
