Charred Scallion Dip

Description

So tasty! And we were so happy to have this in the fridge! (for the short time that it lasted). I found this dip/dressing/sauce/vegetable helper in, ‘Let’s Stay In’ by Ashley Rodriguez – enjoy!


Ingredients

Scale

Charred Scallion Dip – I double this every time!

1 T. olive oil

1 bunch scallions (~7), trimmed and halved (OR, alternatively, I’ve used a healthy half cup of chopped green onion)

1/4 t. sea salt

1/2 c. sour cream

1 T. mayonnaise AND 1 t. soy sauce


Instructions

Heat the olive oil in your favorite skillet over high heat and add in the scallions (or green onions) and salt. Sear and cook for a few minutes while stirring frequently until they are charred (which is different from being burnt!). Set the skillet aside until the scallions are cool.

Chop up the scallions and add them to a small bowl with the remaining ingredients and stir well to combine. We prefer this goodness chilled so you may wish to plan to make it ahead, and it was super tasty on every kind of vegetable (and chips of course!).
