Blueberry Oat Breakfast Bars

Ingredients

Blueberry Oat Breakfast Bars

Crust

2 c. oatmeal AND 1 c. sliced almonds

6 T. honey (or maple syrup) AND 2 T. coconut oil

1 t. sea salt AND 1 1/2 t. cinnamon

2 medium bananas AND 2 t. vanilla

1 scoop Vanilla Whey Protein (optional)

Topping

1/2 c. EACH oatmeal AND pepitas

1/4 c. sliced almonds

1 1/2 c. fresh blueberries

1/2 c. coconut milk AND 1/2 t. cinnamon


Instructions

Preheat the oven to 375, grease a 9 x 13 baking pan with coconut oil, line it with parchment and then grease the parchment as well.

Add all of the crust ingredients to your food processor, pulse until completely combined and then scrape into your prepared pan and smooth out the top with a spatula. Bake for 10 minutes.

Add of the topping ingredients to a medium bowl and stir well. Remove the crust from the oven, press the topping mix evenly over all and lightly press it down. Bake for an another 15 to 20 minutes until the top is lightly browned and the blueberries are bubbling.

Allow the bars to cool completely before slicing and storing (or freezing!).
