Buckwheat Waffles

Description

So tasty (especially with strawberries and maple syrup!). Borrowed from ‘Let’s Stay In’, by Ashley Rodriguez, this is another recipe that should just be automatically doubled – it barely made 3 (x4) waffles in our waffle maker – and remember….just about any breakfast is better with bacon – enjoy!


Ingredients

Buckwheat Waffles

1/2 c. buckwheat flour AND 1 c. flour

3 T. sugar AND 1 1/4 t. baking powder

1 t. EACH baking soda AND sea salt

1 t. vanilla AND 1/4. t. cinnamon

1 1/2 c. buttermilk AND 1 egg

4 T. butter, melted


Instructions

maple syrup and sliced strawberries for serving

Preheat your waffle maker and whisk together the buckwheat flour thru sea salt (6 ingredients), in a large bowl.

In a separate bowl, whisk together the vanilla, cinnamon, buttermilk and egg, then stir the wet mix into the dry mix and finish the batter off by stirring in the melted butter.

Cook the waffles as you would in your waffle maker, keeping the finished ones warm in the oven if you need to and then serve them up hot with strawberries and maple syrup. Brilliant way to start your day!
