D’Lime and D’Coconut

Description

Best new discovery of 2018, already affectionately known as a ‘DLDC’ – big thanks to Three’s Bar and Grill in Kihei for being the inspiration for this tasty tropical goodness.  We analyzed, taste-tested and fine-tuned our own recipe (4 very responsible adults on vacation), and below is what we agreed upon – TRUST – and oh my goodness enjoy!


Ingredients

Scale

D’Lime and D’Coconut – makes 1 delightful drink

a small handful of fresh mint leaves + more for garnish

1 oz. freshly squeezed lime juice

2 oz. white rum

2 oz. coconut cream (this comes in a can just like coconut milk but it has a higher fat content, and NO added sugar.  Most Asian markets carry coconut cream and it’s well worth looking for!)

club soda to top it off

3/4 oz. pineapple simple syrup – (To make the syrup, measure equal parts sugar and water into a small pot and muddle in a handful of fresh pineapple.  Bring the mix to a boil and simmer gently while stirring until the sugar dissolves and then strain into a measuring cup for easy pouring. This will keep in the fridge for several days, or the length of your vacation.)


Instructions

Muddle the mint leaves with the lime juice in a shaker.  Add the rum, coconut cream and simple syrup.  Shake vigorously and strain into a tall glass over fresh ice.  Top with soda and garnish with a sprig of fresh mint (and tropical flower, if available).  Happy New Year!
