Cranberry Relish

Description

Direct from Deanna, this is a new favorite addition to roast turkey (or chicken) dinners (or sandwiches) – though of course, Brock’s Cranberry Sauce is in a bowl right beside…makes it tough to choose (and then you end up eating too much!) – enjoy!


Ingredients

Scale

Cranberry Relish

1 bag (340 g/12 oz) fresh cranberries

1 whole orange, tough ends and seeds removed and cut into wedges

3/4 c. sugar

1, 2-inch piece of ginger, peeled and roughly chopped

1 T. Cointreau (or cognac, or Grand Marnier)


Instructions

Place all ingredients into your food processor and pulse until evenly chopped, scraping down the sides as needed.  Depending on the size of your machine, you may wish to do only half of the ingredients at a time.

Seal into containers and this will keep for ages in the fridge – Deanna also says that it freezes beautifully!
