Dinner with Julie calls these Pumpkin Hermits. I chose pumpkin pie because that’s what they taste like to me, and they’re even relatively healthy! Another great cookie to feed your kids and not feel bad about it.
Pumpkin Pie Cookies
1 c. EACH flour AND whole wheat flour
1 t. cinnamon
1/2 t. EACH allspice AND ground ginger
1 t. baking powder AND 1/2 t. baking soda AND 1/4 t. salt
1/4 c. butter
1 c. packed brown sugar
3/4 c. canned pure pumpkin
1 egg AND 1/4 c. molasses AND 1 t. vanilla
1/2 c. raisins (or any other dried fruit) AND 1/2 c. pecans
Preheat the oven to 350 and stir together the flour thru salt and set aside. In a large bowl, beat together the butter and sugar and then add the pumpkin, egg, molasses and vanilla, beating until smooth.
Add the flour mixture and mix by hand until just blended, add the raisins and nuts and blend again.
Drop spoonfuls of dough onto a cookie sheet covered in parchment and bake until just set, 12 to 14 minutes depending on the size of your spoonfuls. Allow them to cool on the pan for a few minutes before transferring them to a rack.
