Lemon Squares (9 x 13)

Description

Chocolate and lemon are my 2 extra-large vices.  Today it was lemon, so I went looking for a square that I could make without going to the store and found these at Everyday Food.


Ingredients

Scale

Crust

1 3/4 c. flour AND 3/4 c. COLD butter

3/4 c. icing sugar AND 1/2 t. salt

Preheat the oven to 350 and grease a 9 x 13 pan.

Put all ingredients into the food processor and pulse until combined.  It won’t look mixed, but that’s fine – crumbly and floury works.  Spread all onto the bottom of your pan and use the bottom of a glass to press in evenly.  Bake for 18 minutes until just lightly golden.

Filling

4 eggs, lightly beaten AND 1 1/3 c. sugar

3 T. flour AND 1/4 t. salt

3/4 c. freshly squeezed lemon juice – about 4 lemons

1/4 c. half and half or whole milk


Instructions

Time your mixing so that the filling is ready when the crust is finished baking.  In a large bowl, whisk together the eggs, sugar, flour and salt, and then mix in the lemon juice and milk until combined.

When the crust comes out of the oven, pour the lemon mixture carefully over top.

Reduce the oven heat to 325 and bake for another 18 minutes until the edges are starting to brown and the center is set.

Cool completely in the pan on a rack and dust with icing sugar before cutting into squares and serving.  Go ahead and try to eat just one.
