Oven-Fried Zucchini Sticks

Description

Another quick way to use up everyone’s overabundance of zucchini this year!  I had the oven on, so a quick online search found me this recipe, (though I used panko instead of breadcrumbs and Parmesan only).  I think that the finer the crumb, the better looking your sticks, but these were delicious as is.  Ranch or warm marinara sauce are also highly recommended for dipping – enjoy!

Oven-Fried Zucchini Sticks

2 or 3 medium zucchini, cut into similar sized sticks

1/2 c. panko AND 1/4 c. finely grated Parmesan

1/2 t. EACH garlic powder, oregano, basil, salt AND freshly ground pepper

1 egg (or maybe 2) AND 2 T. milk


Instructions

Preheat the oven to 400 and line a large baking sheet with parchment.  Measure out the dry ingredients into a medium-sized Ziploc and give the bag a shake to stir.  In a small, shallow bowl, whisk together the egg and milk.

Roll each zucchini stick in the wet mix, then give it a shake in the Ziploc bag before placing it on your prepared baking sheet, then do the same with the remaining sticks.  Bake for 15 minutes, then take the pan out of the oven and carefully flip over each stick, then bake for another 15 or so minutes until the zucchini sticks are as crisp as you’d like.  Serve immediately!
