Fiesta Tomato Salad

A really quick and simple tomato salad that goes perfectly with anything…though in my case it was Mexican.  This is borrowed from The Pioneer Woman – I made her casserole recipe that was shown on her show with this salad, and of course the meal was terrific – enjoy!


Ingredients

Fiesta Tomato Salad

2 lbs tomatoes, cut up into similar sizes and shapes – Ree did wedges, and different colored tomatoes look great

1/3 c. olive oil AND 2 T. fresh lime juice

1 clove of garlic, minced

salt and freshly ground pepper to taste

fresh cilantro, chopped for garnish


Instructions

Lay out the tomatoes on a plate or platter (or bowl) and mix together the olive oil, lime juice, garlic salt and pepper in a small bowl (or shake it up in a well sealed container).  Drizzle the dressing over the tomatoes and sprinkle on as much cilantro as you wish!
