I found this recipe in ‘The Food You Crave’, by Ellie Krieger, and it’s another quick and easy pancake recipe that all of the ‘kids’ in your family will love!
Whole Wheat Pancakes with Strawberry Sauce
3/4 c. EACH flour AND whole-wheat flour
1 1/2 t. baking powder AND 1/2 t. baking soda AND 1/4 t. salt
1 c. buttermilk AND 3/4 c. milk
1 T. honey AND 1/4 t. vanilla
In a large bowl, whisk together the 5 dry ingredients. In a smaller bowl, beat together the next 5 ingredients.
Use a titch of oil or butter to coat your griddle or skillet, stir the wet ingredients into the dry until they are just mixed – it will look lumpy – and ladle the batter into your pan to make your pancakes into whatever size you like.
Cook until they start to bubble on the side that you can see, flip and cook for another minute or so – keep the pancakes warm in a 200 oven until you’re ready to serve them.
1 lb. strawberries, washed and hulled
1 t. lemon juice AND 2 T. maple syrup
Puree the strawberries in your food processor, and add them to a small saucepan with the lemon juice and syrup. Heat until just warm. I’ve also simply chopped up the berries or mashed them a bit with a potato masher – and if you’re ever short on sauce then augmenting with a bit of strawberry jam goes a long way!
Place a spoonful of the strawberry sauce on a plate, then a stack of pancakes and lightly sprinkle with some icing sugar. Yum.
