Jamie’s Chopped Salad

A little gem that I found while browsing one day, and now I feel like I make a variation of this once a week!  Borrowed from Jamie Oliver, use this as an outline, the key is the super simple dressing and the fresh, fresh, fresh greens that you choose – we love at least a couple of herbs, micro greens and then usually a couple of different lettuces (use up what’s in your fridge!).


Ingredients

Jamie’s Chopped Salad

enough lettuce to equal a head – I usually use 2 types, we like Bibb or butter and just regular lettuce or Romaine, chopped

a few green onions, cleaned and chopped

2 small cucumber, chopped

1 large avocado, chopped

1 package of micro greens – we really like radish or sweet pea, chopped

1 handful of fresh basil, chopped

1 handful of another fresh herb – parsley, dill – chopped

Dressing

equal parts fresh lemon juice and olive oil – usually 3 to 4 T. each

salt and freshly ground pepper to taste


Instructions

Chop everything for your salad, put it all in a large bowl and toss well.  Put the dressing ingredients into a well sealed container or jar and give it a good shake to mix.  Dress the salad as you would and enjoy!
