Good Earth Spinach Salad

Description

This recipe is an outline only, copied from what the Good Earth coffee house calls a ‘Tuscan Spinach Salad’.  It’s a favorite of Brock and I, add whatever fresh goodness you have handy and enjoy!


Ingredients

Good Earth Spinach Salad

Salad

enough spinach to cover a dinner plate

boiled egg, sliced

cherry or grape tomatoes, halved

par-boiled green beans (preferably chilled)

capers, rinsed and drained

finely diced red onion

chopped roasted red peppers

avocado slices

salt and pepper to taste


Instructions

1 can of tuna (packed in olive oil), drained and mixed with chopped chives (or green onion) and enough mayonnaise to make it smooth

Dressing

equal parts olive oil, honey and apple cider vinegar and about 1 teaspoon of Dijon or whole mustard – I put this all into a container and give it a good shake

Pile spinach onto a large dinner plate, decorate with whatever you’re adding to your salad (for us, the tuna and capers are a must!), drizzle dressing over all and sprinkle liberally with salt and pepper.  A brilliant dinner anytime!
