Description
I found this in ‘Keepers’, by Kathy Brennan and Caroline Campion, and it’s not only a perfect weeknight meal, but it’s fish! And tasty! – enjoy!
Ingredients
2/3 c. orange juice
1/3 c. soy sauce
1 T. honey
4, 6 oz. tilapia fillets – lightly seasoned with salt and freshly ground pepper
vegetable oil for cooking
Instructions
Put a large Ziploc freezer in a medium bowl to support it and add the orange juice, soy sauce and honey to the bag. Give it all a gentle stir to combine and to dissolve the honey, then add in the seasoned fish, carefully squeeze out the air and seal the bag. Marinate at room temperature for 15 to 20 minutes.
When you’re ready to cook, place a large non-stick skillet over medium-high heat until it’s piping hot, heat the oil, then add in the fillets, in batches if needed, and cook about 3 minutes per side until golden brown and a bit crispy. Flip and cook for another 3 minutes. This can make a mess inside your house so matter what you do…so if you have a barbecue with a burner, just fry the fish outside!
You can boil the reserved marinade if you wish and use it for extra sauce, but not only did I forget to do this, we found that the tilapia really didn’t need any help – it was that good!
