Tilapia in Citrus-Soy Marinade

Description

I found this in ‘Keepers’, by Kathy Brennan and Caroline Campion, and it’s not only a perfect weeknight meal, but it’s fish! And tasty! – enjoy!


Ingredients

Tilapia in Citrus-Soy Marinade

2/3 c. orange juice

1/3 c. soy sauce

1 T. honey

4, 6 oz. tilapia fillets

vegetable oil for cooking


Instructions

Put a large Ziploc freezer in a medium bowl to support it and add the orange juice, soy sauce and honey to the bag.  Give it all a gentle stir to combine and to dissolve the honey, then add in the fish, carefully squeeze out the air and seal the bag.  Marinate at room temperature for 15 to 20 minutes.

When you’re ready to cook, place a large non-stick skillet over medium-high heat until it’s piping hot, heat the oil, then add in the fillets, in batches if needed, and cook about 3 minutes per side until golden brown.  Flip and cook for another 3 minutes.

You can boil the reserved marinade if you wish and use it for extra sauce, but not only did I forget to do this, we found that the tilapia really didn’t need any help – it was that good!
