Skor Blondies

From the back of a Skor Toffee Bits bag – I admit it, these are a ‘staple’ in my pantry.  Below is what I did for these, but the recipe is basically a softer version of Toffee Bars, with bits added to them.  You could also use the Toffee Bars recipe, add bits to the mix, melt the chocolate chips and dress with more bits – they call these Skor Triangles (cut them in triangles, the kids will love them!).  However you do it, they’re tasty little numbers – enjoy!


Ingredients

Scale

1/2 c. butter, softened AND 1 c. packed brown sugar

2 eggs

2 c. flour AND 1 t. baking powder

1/2 t. baking soda AND 1/4 t. salt

1 bag (200 g) Skor Toffee Bits – one cup will go in the mix, the rest can be sprinkled on the warm bars

1 c. chocolate chips


Instructions

Preheat the oven to 350 and grease a 9 x 13 cake pan – if you’d like these to be cut into pretty shapes then I recommend also using parchment and buttering the parchment for east removal.  In a large bowl, beat together the butter and brown sugar, then add in the eggs and beat until well combined.  Add in the flour, baking powder, baking soda and salt and stir until well combined and there is no trace of flour, then stir in the bits and chips.

Spread the dough evenly into your prepared pan and use the back of a cup to make the top nice and even.  Bake for about 20 minutes -the edges will brown quite quickly, but make sure the middle is set and bounces back to a light touch.  The recipe suggests sprinkling the warm bars with more bits, I’ve tried both ways and never had a complaint.  Wait until they cool a bit before cutting into them (and then try to eat just one!).
