From the back of a Skor Toffee Bits bag – I admit it, these are a ‘staple’ in my pantry. Below is what I did for these, but the recipe is basically a softer version of Toffee Bars, with bits added to them. You could also use the Toffee Bars recipe, add bits to the mix, melt the chocolate chips and dress with more bits – they call these Skor Triangles (cut them in triangles, the kids will love them). However you do it, they’re tasty little numbers – enjoy!
1/2 c. butter, softened
1 c. packed brown sugar
2 c. flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
1 c. EACH Skor Toffee Bits AND chocolate chips
Preheat the oven to 350 and grease a 9 x 13 cake pan. In a large bowl, beat together the butter and brown sugar, then add in the eggs and beat until well combined. Add in the flour, baking powder, baking soda and salt and stir until well combined and there is no trace of flour, then stir in the bits and chips.
Spread the dough evenly into your prepared pan and bake for 20-25 minutes, the edges will brown quite quickly, but make sure the middle is set and bounces back to a light touch. The recipe suggests sprinkling the warm bars with more bits, but I didn’t – either way, you should probably wait until they cool a bit before cutting into them (and then try to eat just one).
