(454 g) extra lean ground beef (or chicken or turkey)<\/p>\n<p><span data-amount=\"1\">1<\/span> t. <strong>EACH<\/strong> salt, pepper, garlic powder <strong>AND<\/strong> oregano &#8211; consider red pepper flakes as well!<\/p>\n<p><span data-amount=\"1\">1<\/span> can (156 mL) tomato paste <strong>AND<\/strong> 1\/4 to 1\/2 c. water<\/p>\n<p>~1\/2 c. cottage cheese<\/p>\n<p><em>Topping<\/em><\/p>\n<p>~1 c. tomato sauce &#8211; any will do&#8230;if you open a can, use it all, I&#8217;ve even used leftover pizza sauce<\/p>\n<p>~2 c. grated cheddar\/mozzarella\/Parmesan &#8211; use what&#8217;s in your fridge and if you remember, sprinkle some on each tortilla before you roll them up<\/p>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\n\t\t\t<hr data-tasty-recipes-customization=\"secondary-color.border-color secondary-color.background-color\">\n\t\n\t\t<div class=\"tasty-recipes-instructions\">\n\t\t<div class=\"tasty-recipes-instructions-header\">\n\t\t\t<h3 data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Instructions<\/h3>\n\t\t\t\t\t<\/div>\n\t\t<div data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t<p id=\"instruction-step-1\">Preheat the oven to 400 and lightly spray a 9 x 13 casserole.\u00a0 Heat up a splash of oil in a skillet over medium heat and cook the beef for several minutes, breaking it up as you go, until there&#8217;s no longer any obvious pink.\u00a0 Sprinkle on all of the spices that you&#8217;re using and mix well, then scrape in the tomato paste and cook and stir for a couple more minutes until the mix is a lovely dark red.\u00a0 Add in the water, starting with a 1\/4 cup, bring the skillet to a simmer and let it gently cook, adding more water if it gets too dry, while you get the tortillas and cheese ready.<\/p>\n<p id=\"instruction-step-2\">Remove the skillet from the heat and stir in the cottage cheese.\u00a0 Lay out a tortilla, add a half cup or so of the filling, a sprinkling of cheese and then lay it in your casserole.\u00a0 Fill and arrange the roll-ups as you wish and if there&#8217;s any filling left, I recommend just adding it on top of the casserole.\u00a0 Pour on as much or as little tomato or pizza sauce as you wish, generously cover with grated cheese and bake for 20 to 30 minutes until everything is bubbling and the top is starting to brown.\u00a0 We enjoyed ours with a quick salad &#8211; such a quick and cozy
