href=\"https:\/\/www.thespruceeats.com\/how-to-trim-a-whole-pork-spare-rib-rack-335863\">online<\/a> but for side ribs, the skirt (or skirt meat) is the flap that sits in the middle of the rack and this needs to be cut away to prevent uneven cooking\/smoking&#8230;and the rib tips contain cartilage, so this portion also needs to go.<\/p>\n<p>For most ribs &#8211; prepared mustard \u2013 (Brock always uses French\u2019s mustard) \u2013 the mustard doesn\u2019t affect the flavor <em>at all<\/em>, it\u2019s used simply as \u2018glue\u2019 for the spice rub &#8211; but for this goodness &#8211; <strong><em>your favorite hot sauce<\/em><\/strong> can be used as the &#8216;glue&#8217; for the salt and pepper<\/p>\n<p>usually your favorite spice rub for meat with NO sugar \u2013 but, only <strong><em>a generous amount of kosher salt and freshly ground pepper<\/em><\/strong> (equal portions of both) was used for these<\/p>\n<p><em>your favorite serving sauce<\/em> &#8211; <a href=\"https:\/\/deannasdaughter.com\/?p=18173\">Franklin&#8217;s Barbecue Sauce<\/a> is what inspired Brock to have a go at side ribs<\/p>\n<p><em>all of your top notch barbecue
