dampen the ribs, it&#8217;s a glue for the rub with a bit of zip<\/p>\n<p>Equal parts kosher salt and freshly <em>coarse<\/em> ground pepper (what we used) &#8211; OR &#8211; your favorite spice rub for meat with NO sugar \u2013 we have a couple that we love from <a href=\"https:\/\/silkroadspices.ca\/\">The Silk Road Spice Merchant<\/a><\/p>\n\t\t\t<\/div>\n\t\t<\/div>\n\t\n\t\t\t<hr data-tasty-recipes-customization=\"secondary-color.border-color secondary-color.background-color\">\n\t\n\t\t<div class=\"tasty-recipes-instructions\">\n\t\t<div class=\"tasty-recipes-instructions-header\">\n\t\t\t<h3 data-tasty-recipes-customization=\"h3-color.color h3-transform.text-transform\">Instructions<\/h3>\n\t\t\t\t\t<\/div>\n\t\t<div data-tasty-recipes-customization=\"body-color.color\">\n\t\t\t<p id=\"instruction-step-1\">Trim the beef rack so that any fat is no more than 1\/4-inch fat \u2013 if the fat is any thicker then the smoke won\u2019t penetrate (beef ribs usually come beautifully trimmed from the butcher)<\/p>\n<p id=\"instruction-step-2\">Rub the meat all over with the hot sauce, sprinkle it generously with salt and pepper and get it onto the smoker.\u00a0 Smoke at approximately 250 to 275 degrees for about 6 hours (this is on the <a href=\"https:\/\/www.kamadojoe.com\/\">Kamado Joe<\/a>) until the internal temperature is 195 to 200 degrees.\u00a0 Spritzing the beef the last couple of hours with even a little bit of water is recommended in the book, but the Kamado is so humid that Brock didn&#8217;t feel the need.\u00a0 Allow the ribs to rest, tented in heavy foil (don&#8217;t wrap or the crust gets soft) for about 45 minutes before slicing and serving as individual
